We have a Christmas custom that just sort developed organically and took root over the years. I would have a mutiny if I tried to alter it at this point.
Christmas eve dinner is King Crab Legs,
Christmas morning is Eggs Benedict,
Christmas early dinner is Prime Rib Roast with Popovers (popovers are mandatory).
Somehow I wound up with the cooking duties for all of this - maybe my wife IS smarter than me???

Going to cook a pork shoulder for Xmas day.....know I'll catch some flack but cooking it in the oven then making cracklings with skin. That's the only reason it's not going on the smoker.

I bought a deepfried turkey breast at Sam's..and a sprial cut honey glazed ham..both should be tasty..

The last few years we have been having Mexican Stackups. Make a big pot of pinto beans with ground meat and taco seasoning, pot of rice, crock pot full of Rotel cheese dip, pour on tortilla chips and dress with lettuce, tomatoes, onions, jalapenos, black olives, sour cream, guacamole, and salsa.
With the grand parents gone now, and all of the traditional meals for Thanksgiving and New Years, it is a bit simpler of a meal with going around to different houses for Christmas.

1st attempt at smoking a prime rib. Just the wife and I so if it flops, I'm sure it'll still be eaten. Also doing summer sausage and smoking a roll of Blue & Gold.
