Where do you buy beef and pork fat?

I was wondering if y'all knew of anywhere to buy hard beef fat for hamburger and pork fat (e.g. fatback or high-fat pork trimings) for sausage.
I live east of the DFW metroplex between Greenville and Sulphur Springs. Anywhere in North Texas would be fine.

BTW, I'm looking for about 20 lbs of beef fat and 10 pounds of pork fat or 20 pounds of 50/50 pork trimmings.

somebody on here, maybe Mr. Clean, used to talk about putting bacon ends in the hamburger. Tried that and that is all we use now. Get bacon ends at Kroger.

I get my beef fat from Brookshires in Commerce or the Delta grocery store in Cooper. Cooper gave it to me and Brookshires charged me $1 for about 5 lbs. Just tell the butcher you want to mix it with deer meat. You might can get pork from them too. You might call them first because they get rid of all the fat they trim. If you call they will save you some. I use pork roast. 1/3 ground pork to 2/3 ground deer and Adkins sausage seasoning for breakfast sausage. Sure turns out good.

Just make sure they give you the hard fat, with a little beef trimming still on it. The stringy stuff is bad eats.

If you go to your local grocery store just ask to see the meat market manager and explain what you are doing. Most likely they will sell it to you very cheap or just give it to you. As said earlier at the supermarkets they trim all the beef and just throw the trim away or sell to grease companies. For pork fat I would just use bacon ends, it will probably end up tasing better anyway than using fat back.

Thanks for all the replies everyone! Very much appreciated! I was able to get some pork fat from Brookshires in Commerce and I picked up some bacon ends as well. Looking forward to making some more sausage!

All we use is about a pound of good peppered bacon for burger unless it is a big bodied deer and we go 1.5. Pork butts work good for sausage

I asked the butcher at Kroger for some suet and he just looked at me like I spoke a foreign language. Nothing better than slow browning your chili meat in a rock of suet.
