Just made up a 80lb batch of sausage, and it is awesome. The recipie is from a friend in South Dakota. Very simple, and awesome.
4T Brown Sugar
3T Sea Salt
2T Ground Sage
2T Coarse Black Pepper
3t Paprika
2t Nutmeg
1/2T Cayanne Pepper
1 1/2T Crushed Red Pepper
1T Garlic Salt
This is for a 10 lb. batch. Just mix well and package. I have made it with moose, and bear, but mixed it 70% pork to 30% wild game.
