Yeah yeah I know - duck down and get ya some. But really...
Anyone have a good recipe? Dad and I thawed out a bunch of divers and want to try it out. Found some links (pun intended) on some old posts but they no longer work. Looking for something spicy. Thanks fellas.

We get ours made at billideauxs meat market in lake Charles. We do an andouille/Cajun style. I have them add minced garlic and green onion. 60% pork,40% duck. Everybody that comes over lives it. You can find andouille seasoning recipes online.

Spicy German sausage is good with the same 60/40 pork/duck mix, but I never made it myself. Always had it done at the processor.

My deer processor does duck 50/50 with pork in all the same flavors as deer... smoked, summer, cajun, german, etc.. and the price is right.

Also-mix it 50/50 with brisket and grind it. Makes great burger. My wife won't buy beef burger anymore.

Kubys will process sausage that is only your duck with some fat and spice. Really good stuff
