I would stick to oats and get them in the ground as soon as possible.

Oats do well everywhere down south. Any cattle on the place?

Oats are what we plant for out winter plots.
Word of warning, if you cannot irrigate your odds are greatly reduced of having any significant growth
For it is not the quarry that we truly seek, but the adventure.

DO have cattle on some of the place but not going to plant where they have access....I'll be planting next year.....Looking for the most drought tolerant variety....First eight weeks the plot will have a barrier to give the plot a chance to establish....not sure if I'll be able to irrigate...

Also how many deer will have access to the plot and what size? To small and to many deer will keep it looking like plowed ground. You won't need irrigation if you get normal fall rains. Shorter and cooler days really help cool season plantings.

I will not be able to control the amount of deer that will access the plot once the barrier is taken down...The plot will no smaller than 3 acres

for every stereotype there's a prototype don't be the prototype

For year around food plots? That's incorrect nsmike. George West is pretty dry and most of the soil is poor quality. Trying to be a dry land farmer in that part of Texas is completely hit and miss. Mostly miss. Oops just noticed you said fall rains. Yes, oats should do well in the fall with average rainfall. Shoulda already had them in, though.
Even with proper cultivation, fertilization to correct soil deficiency and excellent control of weeds, your chances of producing a healthy spring/summer food plot down there are very low. The barrier will help the plot to establish, but if it doesn't rain the proper amount at the proper times your plot will fry in the desert sun.
Best would be irrigated, high-fenced lablab. stxranchman may be able to offer more on good plantings for S. TX.

Stxranchman is two counties away he recommended oats. I get that parts of South Texas are hostile to food plots but South Texas is a big area. You need to make recommendations tailored to the conditions where the OP is. South Texas is just too big for general recommendations.
