For purchase, I've always seen it referenced as "bone-in" or "boneless" and for preparation of whole cuts, the process of removing bone as "de-boning".

So it's de-plucking a chicken rather than plucking a chicken or duck?

So it's de-plucking a chicken rather than plucking a chicken or duck? No - but it would be de-feathering. Plucking means to remove.
