Filet them in half and slice a jalepeno put it in the center and wrap it in bacon and grill.

Have you tried Obies Sweet Rub? Used with pineapple juice it is very tasty!!

I'm making this one tonight actually. I've made it 3 times before or so because I really like it. It's marinating in the fridge right now. I don't soak the chilis overnight. I just soak them about 10 minutes in warm water and then cut them up. I've made it with chipotles and its good if you like spicy food. They will be grilled later. I don't make burritos out of them, but we just eat the chicken breasts whole by themselves and let them marinate in this stuff. http://www.chipotlefan.com/index.php?id=chicken_recipeChipotle's Chicken Marinade 1 (2 ounce) package dried ancho chiles 1 teaspoon black pepper 2 teaspoons cumin powder 2 tablespoons fresh oregano, chopped 6 cloves garlic 1/2 red onion, quartered 1/4 cup vegetable oil 4 chicken breasts (6 ounces each) Soak dry chilies overnight in water, until soft. Remove seeds. Add all ingredients except meat in food processor. Puree until smooth. Spread mixture over chicken, or other meats and refrigerate at least one hour, up to 24 hours. After marinating, heat grill to about 400 degrees F, or if cooking inside, heat small amount of oil in skillet or grill pan over high heat. Salt meat to taste (optional), and grill lightly, turning only once, until done. 4 minutes per side of chicken. Recipe will make four burritos.

Use chipotles if you can and not the ancho chilis. Last night it didn't turn out as good with the anchos. It wasn't as smokey nor as spicy Oh, and I use olive oil instead of vegetable oil. I haven't tried it with vegetable oil.

The trick with grilling chicken breast is “direct” and then “indirect” heat, and pull it off before it is over cooked. Trust me on this! First, get your grill as hot as you possibly can, you cannot get it too hot!! Throw the chicken breast on, sear it good on both sides. Then move it to indirect heat (a section of the grill where there is no flame underneath or flame is deflected with foil underneath..), and let it slow cook there. Then be sure to pull off before it is over cooked. This will produce the juiciest chicken breast ever. As far as marinade, I use olive oil and spice, I’m always trying different spices…

ahhhhh..... Obies Sweet Rub......... good stuff right there. I never can get mine to taste as good as his does out there at Trader's Village.

same here, I may have to try it again soon. He helped me perfect my briskets. I go back and forth between his spicy fajita seasoning and MooCue for my brisket rub.

Besides the above mentioned sweet rub, I marinate the breasts in italian dressing overnight then wrap in bacon and grill them. Easy and tastes good.
Another one I was going to try was to inject them with Spicy Creol Butter from Cajun Injector and baste them with a rasberry chipoltle sauce while grilling.
