A friend has a garden and brought me a sack full of jalapenos, chili, habanaro, and other peppers. It's more than I can eat right now and I don't know how to can them. Can they be frozen?

We clean and chop, then freeze the peppers in ice trays. After they are frozen we pop them out and store in zip lock bags. When we need some we just throw in a cube of what ever for flavoring.

I dry them then grind them to powder and put them in shakers. It takes a lot of peppers to fill a left over spice container but it is worth it to me.

SWMBO pickles them. We cannot keep em in the pantry cuz the neighbors always seem to know when a batch has been made.

Be careful when you take the lid off of the grinder. The powder can get in your eyes. Too late buddy! The first time I did it with Hatch chilies I got everyone in the kitchen.
