I never shoot this thing and even when I do its not all that fun. I could put rails and optics on it but seems unnatural and impure on an AK. I only bought it just to own one and for the future zombie outbreak. I have 2k rounds and 15 mags but the thing just sits in the corner.
Thinking about selling it and getting something I know Ill use. e.g. carry gun, deer rifle, etc. Only thing stopping me is that I keep thinking AKs may become scarce in the future. They've been steadily increasing in price over the past years. Id hate to sell now just to regret it.

I've sold or traded a few and always kick myself eventually. If you don't have to then I wouldn't.

I'd hold onto it. JMO, but I think the next scare is gonna be worse the last two.

If you don't have a compelling reason to sell it, then IMO you shouldn't (and you are already stating you are going to keep it).
Selling it now, at the tailend of the buyers scare, well you won't get a great price for it. The next scare will likely double or triple its value.
At the same time, I've come to the conclusion that I will no longer sell guns, unless that sale means I am going to purchase a like number of guns. I've sold/given away too many and I kick myself for that.
Rather than contemplating selling it or buying stuff that simply won't make it any better (again, as you yourself allude to), I would actually buy at least 500rds (if not 1k) and if you aren't going to shoot it -- sit them off in a corner for that coming rainy day....

I'd sell it and fund a firearm you'll shoot. I had an SKS, that never got shot. I sold the rifle and the ammo, and paid for my Rock 7mm barrel, that got turned into a hammer of a 7 Rem Mag. That barrel, and the rest of the rifle will be in my hands on an elk hunt, Mule deer hunt, and whitetail hunt over the next three months.
If you want to be prepared, stock up on loading supplies for the rifles and pistols you do shoot.
P.S. I don't see the .223/ 5.56 and AR15 going anywhere while we're still alive.
