I bought the fixings at the Kroger deli yesterday, but I'm not sure about the process. What steps do you go through to make a scratch Ruben sandwich? I really got the hankering this week.

Paint the bread with Thousand Island dressing (I do both sides) add the sauerkraut, pastrami and swiss cheese, grill in lightly buttered pan till cheese melts and bread is crispy. Good eatin.

I was thinking it might come apart when I turned it. This is when one of those sandwich presses would come in handy.

Bill my wife makes them in the oven...she spreads thousand island dressing on both pieces of rye bread...on one she places the corned beef or pastrami (shaved very thin) tops the meat with very well drained sour kraut and swiss cheese...then she place the top on and bakes in the oven at 350* until warmed thru...if you want the bread less toasted then tent with foil (don't seal or they will steam)...

Drain kraut, warm in small sauce pan, gently warm pastrami in another pan, light coat the outside of the Jewish Rye with either Miracle Whip or Real Mayo instead of butter, stack all inside, add swiss and a good swirl of RUSSIAN dressing, Grill in cast iron pan like you would a grilled cheese... SErve with big chunk of Kosher Dill Pickle and Sour Cream n Onion chips----- but of course a tall iced cold Keystone Light!!

After warming kraut pat dry with paper so your masterpiece won't be soggy.

Secret to whole process is everything warm inside before it hits the cast iron and don't use thousand island dressing.....

It came out fine. I browned one piece of buttered bread on one side in a pan, and plated it. I browned the second piece of bread and turned it, placing the cheese directly onto the browned bread, then added heated corn beef, and kraut on top of the corned beef. Next I put the salad dressing on the first piece of bread and plated the whole sandwich.

I have the fixings for 4 more sandwiches. I think the rye bread is the first loaf of bread I ever paid $3.50 for, but it was worth every penny.

up Sounds great Mr. Oxner...I love rye bread toasted with some good preserves for breakfast...it is expensive though...

Have you had one from the 'Kenny & Ziggy's' NY Style Deli in Houston? Those things cover the entire plate!

Hey Bill!

I love Ruben's but they are Sandi's favorite.

Sounds like you've got the procedure down pat.
