Deer because they don't migrate and you don't have to deal with people getting your spot. Don't get me wrong, i love bird hunting but i can deer hunt all day and you normally don't for birds.

Can't do just one specie of critter...but a whole raft of similar stuff really appeals to me. I know it's prolly some kind of heresey but I could easily never shoot another White Tail or Mule deer ever again...with a lone exception for Wapiti ... IF...and only IF I could hunt even just the representative thin skinned European, African & Asian antelope now loose in North America. My Big 3 of that crowd would be Red Stag, Oryx & prolly Sable...but that could also be Gemsbok, Kudu & Sika just as easily.
I grew up self taught hunting Ducks and was gung ho for a long time until I like to got killed a couple times hunting alone when no one else would go, got into Quail so deep I was raising not only high bred English Setters in my back yard ...but quail too. I changed jobs one time and my wife called me in NYC 3 weeks into a major Trade Show to tell me she was selling off 15 pups out of the last two litters for $50 each WITH the papers when my stud dog's grandaddy was going into the FDSB Hall of Fame...and what did I want her to do with the 3 mama dogs and the stud....and she was keeping the 2 Scotty house dogs 'cause the City of Carrollton was making a LOT of threatning noise about my backyard kennel...Oh well

Never gone on an Elk hunt but I think that would have to be my #1 if I had the choice. After that its hard to pick between bowhunting whitetails and chasing trophy bluecats with rod and reel.
