Now that shrimp season is in full swing, yesterday I got the urge to cook some BBQ shrimp. The recipe is "very" close to the one that Pascal's Manale Restaurant in New Orleans has been using since the beginning of time. Trust me. It's awesome. I purchased some head-on shrimp for presentation. But, unless you can get head-on shrimp fresh off the boat, used de-headed shrimp in the shell. Enjoy.



2-2 1/2 lbs. Jumbo Shrimp, unpeeled (20 or less shrimp to a pound)
One stick Butter
4 ounces of Vegetable Oil
2 ounces Worcestershire Sauce
1 tablespoons ground Black Pepper
1/4 teaspoons of ground Rosemary
1 Lemon, sliced
Tabasco Pepper Sauce (to taste)
1+ teaspoon of Salt
1 clove of crushed Garlic

Cooking
Preheat oven to 400 degrees. Melt butter with oil in saucepan.
Add remaining ingredients. Mix and simmer briefly. Place shrimp into an aluminum pan and grill over medium coals.

And good cold beer.

That was one of my favorite restaurants in New Orleans. My daughter took her class there when they were in New Orleans doing pro bono.

Try sirachi sauce and honey in equal parts, coat on shrimp and grill.

I put them on skewers, brush with olive oil, sprinkle with Tony Chachere's and then squeeze a lemon over them before serving. Good stuff.
