Well We have a work lunch tomorrow.. Hoping to have the best meat!!! Starting my brisket in about 1 hours and will take off tomorrow am about 7!!!

No, sadly. My english professor decided to take a dump on all her students. I have to read half of The Canterbury Tales, and half of the book "Portrait of an artist as a young man before next Wednesday with misc small assignments on assigned reading. I should have taken the long summer engl course but since we are going out to the cabin Saturday I have to squeeze all this crap reading into Friday and Monday cause I have a different class on Tues, and Thursdays. Sorry man, I was hoping I'd be able to swing it. Thanks for starting it though.
Ask Orn, I'd been thinking about trying to get something like that started too.

Check this out: Lesson 1: General Prologue
The reading assignment for this lesson is Chaucer's The General Prologue to The Canterbury Tales (3-26) and the Prologue to The Parson's Tale (485-487), the final "tale" in the collection. The First 18 Lines General Prologue Quiz
This is a fifteen-question multiple-choice quiz. Each question is worth one (1) point. Lecture 1: The General Prologue Lesson 1 Discussion: Choose a pilgrim Begin A List for A Portrait of an Artist
Lesson 2: The Knight's, the Miller's, and the Shipman's Tales

Please do both threads for a total of twenty (20) points.
The Monk's, the Nun's Priest's, and the Pardoner's Tales
In this lesson, we'll read three tales by preachers, the Monk's Tale (186-214), the Nun's Priest's Tale (214-231), and the Pardoner's Tale (239-258). In addition to highlighting three different styles of preaching, the tales present us with three very different religious figures (though, as we'll see, if the Pardoner is "religious," his religion is money not Christianity). Pay special attention to the Host's role in the actions that surrounds these tales.

Just trimmed one down to about 11lbs. Fresh crushed black pepper and kosher salt only. Putting it on the BGE at sunrise.

Cooked for 9 hrs. I took it off too soon. Thermo said 180 in thick and 188 in the flat so I decided to pull it off and let it rest for an hour. Nice bark is what fooled me into thinking it was close to ready. Great flavor, but it was still a tad tough. I compared it to a cafeteria style baked brisket.
I took the wet side and cut it in half and wrapped it up and put back on for three more hours. It turned out perfect.
I was trying to cook it without wrapping because so many of the pros call it the Texas Crutch. Well, if I have to wrap it a few hours at the end to keep it from drying out I guess that's what I'm gonna do.
