I hunt around Centerville, Jewett area.
Is it too late to trap racoons, and put them in the freezer to eat?
Any input would be helpful.

Late last year a guy that was doing some work on our place offered to cook a coon if I'd supply the coon. No problemo, so I trapped one (floating catfish food as bait), called him, shot the coon and gave it to the guy fresh. Couple of days later he brought the cooked coon. Man, it was pretty darn good.

My grandfather used to say that back in the Great Depression, when folks were real hungry, a lot of coon got eaten. He said that folks understood that when coon was served, there was at least one thing that you always did. That was to leave one foot on the served coon, so that your guests would know for sure that they weren't eating dog.

Pretty sure if I was hungry enough to have coon as a full meal, I would not mind eating a dog either...

You guys are a bunch of gastronomical sissies. The coon was tasty, but we aren't going to make a habit of cookin em. Coon is much tastier than goat, and maybe better than squirrel, but not as good as rabbit. I haven't eaten dog, but I would try it. Not eating cat. No way. Rattlesnake is quite good. I don't think I've ever had armadillo, but the depression era folks ate em and called em "Hoover Hogs". OOOO! And I love escargot, but I'd prefer that you not call em snails.

So far in my life the only thing that my body rejected and that my throat would not allow to pass was liver and onions. I was so hungry one day (USMC, and our chow hall had Liver and Onions on Wednesday) that I tried to eat liver, but my throat overrulled my intentions.

My grandpa loved squirrel and the best part (to him) was fried brains. I'd shoot and skin a bunch of squirrels for him and grandma would fry em up. Grandpa would have a small pile of squirrel heads and he'd crack em and eat the brains. Happy as a fellow could get while eating the brains. I loved him and shot squirrel just for him but I couldn't even watch him eat brains.

I'll vouch for the coon! We took one to a fire station a few years back when they had the trailer smoker fired up. Seasoned him up with brisket seasoning and he was great! I'd eat another one anytime.

Back home we used to boil em with salt n pepper, then bake it covered with sweet taters. Man that meat would be sweet and usually tender if it wasn't overcooked. You could eat the taters to. Coons SELL like hot cakes in N.La.

Coon Sauce Piquant over rice is excellent. It's all a matter of cleaning the coon properly. The scent glands under the forelegs and along the spine in the small of the back must be removed. Meat is meat. Coon is good. But not as good as Nutria which are easier to clean and generally more tender.
