So, as a Wild Game processor, I see comments and posts from folks talking about bad experiences with other processors. I have often wondered if they might be overreacting.
A few days ago, we had a customer bring in some already processed venison that was in sealed packages. He brought in roasts and steaks, and wanted it ground into burger. I figure all we need to do is open up the packages, and grind it, right? Nope! I was SHOCKED at how much hair was on this meat! This was from a bigtime processor (no, I won't tell you who) in North Texas, and I was completely embarrased for them.
I can't believe they allowed meat to leave their shop hairy and dirty. Unbelievable.

That's what the average guy deals with. The owner may not even know what us happening but the workers see $$$$ so they blow through things.

A lot of how meat goes out is how it comes in.If a person doesn't even try to halfway clean an animal before he takes it to the processor I would not think he would get supper clean meat coming out. I hear of people gripping about the amount of meat they got back. Maybe that had to do with where it was shot or how it was taken care of before it got to the processor. I knew of a processor that used a propnae torch to burn off the hair. That is why I do it myself.

More and more processors will only accept only gutted whole carcusses these days. I presume due to the vast influx of new inexperianced hunters who do not skin and quarter correctly.
