I'm getting back into bow hunting My draw length is 27" What size arrows would I want to use?

In all honesty there is not enough information given to truly give the best answer. length will depend on the spine and also the broadhead you are using (not to mention personal style in what you want). If you are using some of the larger fixed blades you are going to need it longer. In turn that means you will need a stiffer spine.

Do you use different arrows for hunting different animals?
I havnt shot a bow in 15 years and never been hunting with a bow. I'm trying to get into bow hunting So any knowledge would be appreciated

Most pro shops will measure from the very front of the self to the middle of the nock when at full draw because that works with all rests and types of broadheads Rough estimate. .. looking for a 26-27" arrow. Best thing is decide what finished arrow weight you want then match with the proper spine. Example 27" bluestreak 350spine= 360gr with 100gr tip Or BEA 27" deep impacts 350spine=415gr with 100gr tip

I always cut my arrows 1/2 - 1 inch longer than my draw length

Mine are 1" shorter than my draw length, I bought a real cheap arrow that was 31" long and marked every inch and cut it right where I want it. When I first started (not that long ago) I thought there was a simple formula to determine arrow length based on draw length and weight but what I have found there isn't. There are a ton of recommendations but really comes down to each different circumstance.

Is there a reason why someone wouldnt want an arrow longer than their draw length? seems like that would be safer so the arrow doesnt come off the rest?

Depends on the design of broadhead being used, the total arrow weight they are looking for, design of the bow, design of the rest, spine of the arrow, well you get the point.

Most rests now are located behind the self, so 2-3" from the front of the self. If you use a fixed broad head and a drop away you have to make sure that when you draw you have enough arrow to keep broadhead from hitting the self before the rest comes to max height as you draw. 99% of the time you can go an inch to two shorter and it doesn't matter. Biggest thing on arrow is a length that allows proper spine of your arrow for the total arrow weight you want. Example: 70lb bow with a 28" draw. ... if I want to go with a lighter arrow I may go from a 350 spine to a 400 spine, but I will need a 26" arrow in a 400 spine because a 27-28" arrow in a 400spine would be under spined. And the reverse would be go to a 27-28" arrow in a 350 spine because a 26" 350 spine would be too stiff

Just personal preference for me at full draw the tip of my broadhead is at the end of my shelf, I just don't like my broadhead hanging out. I use a full containment QAD rest so falling off is not a concern for me. I am a 29" draw, 28" arrow 350 spined Easton FMJ. After my moose hunt I may switch to a 400 Spined arrow if I do that I will look at going to 29" but I sure love my 28" fitment on my bow.

Depends on bow and other factors. Would recommend a proshop to measure what you need for you and your setup. They will measure and make sure you get the exact right length.
If it is not worth going through a pro shop and having them measure for you then you should probably just sell your bow. LOL
