I don't have a recipe for ya, but I do have some ideas. I saw this on TV. Use Chorizo in with your meatloaf recipe and wrap it in bacon with a basket weave. Looked awesome.

Ingredients

• 1/8 teaspoon crushed red pepper
• 2 eggs, beaten
• 3/4 cup fresh bread crumbs
• 1/4 cup diced onion
• 2 teaspoons prepared mustard

• 1/2 cup ketchup
• 1 teaspoon prepared mustard
• 4 teaspoons brown sugar
Directions
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, combine ground beef, 1/2 cup ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion and 2 teaspoons mustard until well mixed. Line a 9x5 inch loaf pan with foil. Press meat mixture into pan.
3. In a separate bowl, combine 1/2 cup ketchup, 1 teaspoon mustard and brown sugar until smooth. Spread brown sugar mixture over meatloaf.
4. Bake in preheated oven bake 1 hour 10 min, until no longer pink. Drain off fat. Let rest 5 minutes before serving.

I think she usually has to cook it a little longer than recipe calls for

90/10 beef, lots of bread crumbs or smashed crackers, ketchup, egg, tiny diced jalapenos. frozen shredded cheddar, salt, pepper, worshesir (sp), garlic power, fine diced onion, wrapped in bacon. Bacon is cooked but meatloaf is not done yet brush ketchup on top. When ready let it set up for about 45 minutes before you slice.

Put a can of chili in there. I put some leftover homemade in my last meatloaf and it turned out fine. Some people use oatmeal, rather than bread crumbs.

I don't have a standard recipe, I just wing it

I use French's fried onions instead of cracker or bread crums.
I use some picante sauce instead if all tomato sauce.
I hate bell peppers so I use deseeded japaleno's.
Also may add black and/or green oilves

Stuffed Meatloaf.
4lbs lean ground meat/1lb mild sausage/crackers/chopped onion/2 eggs/1tbs worchester sauce
Mix these ingredients together and divide in half. Place one half in greased dutch oven, spreading out and making a bowel in center.
Then layer in sliced mushrooms, chopped red bell peppers, and layers of sliced provalone cheese.
Take other 1/2 of meat and spread out over the top, be shure to press it down well around the edge to seal it off.
Then spread 1 med can of tomato sauce on top, salt, pepper, a little garlic powder and cover.
Bake at 350 for about 1 to 1 1/2 hours or until done all the way thru.
