If I have one package of casing how much link sausage can I expect to make poundage wise. We are looking at making 100 pounds of link tomorrow and need a idea of how much casing we need.
Big ones line-up, little ones bunch-up

If you have a "hank," which usually has a ring around a bunch of casing, you should get around 100#

Those barely make 20 pounds. You need more. I've learned to only use those in a pinch. If you can, run down to your meat market and get some fresh casings. They are much stronger and wont burst as much as the dried ones.

Took your advise and got some. Very little problem with tears. Made 100# of German link and 200# of breakfast sausage Sunday morning. Tried Fiesta link seasoning and the old standby of Leggs Plantation. GOOD GOOD GOOD

We always get our casings from a local meat market they sell in bunches of what they call "sets" I dont know if it is a widely known or used term, but a set will stuff about 60 lbs of meat.

if you can find a slaughter house, most of the time they will sell them too, "sets" of casing varies in size depending on the size of the hog... i bought a set in Shiner over new years and made right at 120#'s... so i always ask how many pounds the set will make
