Hog meat help needed

My son and I shot 4 hogs this weekend...we've never hunted hogs. What should I have the processor make? Just cut the blackstrap and tenderloins and then make summer and breakfast sausage?

Depending on the processor, there are lots of sausages you can get. You might ask your processor if they cure and smoke hams and/or pork chops. They are delicious!

I used to think i had to hit the processor with my hogs, but that got crazy expensive, so now I only use a processor for various sausages, and occasionally slicing chops or ham steaks from a larger pig. Most of my pigs I just quarter up and debone the backstraps and loins myself. Easy to throw some strap or a ham or shoulder on the grill. Even the ribs are an easy job with loppers or a sawzall. I also like to keep a smaller pig whole in the freezer for bigger cookouts.
Our favorite sausage is breakfast pan sausage with a bit of spice. We use it for dips, lasagna, and many other recipes that usually call for hamburger. Our processor also makes a dried sausage (mixed with beef) that makes a great snack for the blind.
