Shot my first Aoudad this week. Here's the thread:

I hear the meat isn't good and it looks awful. I cut out the backstraps out of curiosity. Does anybody have a recipe?

Congrats on the Aoudad, Ive tried several aoudad several different ways and Ive given up on it.

Lonnie Walker on here loves to eat it along with Javelina so you may want to Pm and get some recipes.

I have eaten five of them, and they were excellent.

Very similar to venison, with nothing unpleasant about it at all.
Didnt do anything special to cook it.

I handled the meat fairly carefully: gutted them as soon as they hit the ground and got them cooled out, skinned them as soon as I could, kept them clean, and aged them...

However, none of them were as big and old as the one you shot, so that may make a difference.

(And that is a NICE aoudad, by the way! Congrats!)

Anyway, I would say, just handle the meat carefully and give it a try and see how it comes out...

Thanks, Nick. Maybe it has to do with age or size, but the backstraps on this one are tough and seem gristly. I'll try it this week and give an update in case anyone cares

JKC, I see you still havn't learned to not pee on that fence!
We still on for a gator hunt?

We eat lots of aoudad every year, lately we have been grinding it up into hamburger an adding pork fat to it. I mix it with lots of different types of meats to change the flavors, but we do enjoy it!

I'VE TRIED EATTING THEM EVERYWAY YOU CAN AND ITS JUST NOT GOOD BEST I'VE HAD WAS IN TAMALES BUT YOU CAN EAT ANYTHING IN A TAMALE!!I DID GRIND SOME UO INTO HAMBURGER WITH HICORY SMOKED BACON AND IT WAS OK!!! YOUNG FALLOW GROUND UP WITH MAPLE OR HICORY BACON IS TOO DIE FOR!!

We have processed a few Aoudad for customers. Didn't hear any negatives. Turn it into sausage to cover any possible "off" flavor?

very good eating. Meat could be a bit tough, even backstraps.
Dont overcook if grilling!
I think best is stew, hamburger turned out very good too.

I will sausage a Ram for the most part. I have had a roast that was done in a crock pot all day long from a 32" ram that was actually incredible. I tried a grilled tenderloin steak once and I have some old boots that are not as tough.

The ewes are good eating for the most part. Have ground them with a little beef mixed in as ground, and also have used backstrap wrapped in bacon and grilled as well. You can chicken fry the backstraps/tenderloins as well and it is pretty dang tasty.
