Usually for me 200 pounds or more I have it processed into sausage anything under depending on where I hit him and the meat smell I just grind em up or put the quarters in the freezer.

I cleaned and ate a 450+ boar before I knew that I was not supposed to. Tasted great (not like chicken). I shot a 150 lb boar last year that smelled so bad that I could hardly walk up to him. I agree with most everyone else here, if they smell strong it is best to leave them alone.

...for reassurance, remove this gland...
and follow the advice of covering the skinned and quartered meat with ice and draining/replacing ice for several days. Some also add a capful of vinegar to the ice slurry.

It's not just boars. Took a very large sow this past Feb. that curled my nose hairs b4 I got out my knife. Removed ribs, quarters and all meat down the spine. Even after brineing the meat for 3 days, changing out the water each day, it still smelled bad...cooking stunk up the whole house!

First one that ever smelled bad. Next one that smells bad, I am not wasting my time on.

I will eat them all. I choose not to, but I don't kill anything I don't plan on eating.

I have never had a stinky 1 like you say. But a friend killed 1 and he said it was because of an infection. pig had been shot but never died and had a nasty white creamy infection. yum yum

Just ate a plate of 250' boar stew and it was slamming! I soaked the meat in icy water for 3 days, draining often.


Danged hogs been messing up the yard!

They are all nasty where I hunt. Tough as shoe leather. We let the yotes and buzzards have them. Lots of piggies this year. Count is 30+.

+1 I've ate em all, too. Recover them quickly and gut em, pack them in ice for at least a day, (usually out of necessity because of travel time) and have at em.

How big do you think the pigs are that they butcher for HEB or Wal*Mart?

90% of the wild boar in the US are less than 4 generations from being a farm raised hog. Shoot pigs in the winter after deer season and take them to a processor. They taste great. Most of the bad meat is from guys who did not clean the hog and did not know how to process them. All meat needs to hang in a cool area and most of the blood needs to be removed.

Been shooting and eating them for a few years. Word is Sows are good to any size. Personally I found that upwards of about 220lbs the Boars start to get rank and it is in the meat. (This is all assuming you always field dress immediately and take care of your meat). After 220, those boars take more work to get them palatable and it gets to be a judgement call on a case-by-case basis. If I ever shoot a monster, I'm pretty sure I'll just be taking him for a trophy but anything else goes in my 2 freezers (I have 6 or 7 in them now).

Wish I could eat all the ones we shoot. Typically, I just process 2-3 80-100lb sows. We've got so many that you can be selective.

I've never killed one I could'nt eat, Guess I've been lucky. Even big boar's we make sausage and or chili meat "yes wild hog in chili" I recommend the chili meat it's good. Now if the pig has white puss coming out of it hell no I aint eating it.

I've eaten up to 300lb boar. I wouldn't call it my favorite things to eat but they are not that bad. The best thing to do is to hook the hose to the cooler drain and tilt the back end of the cooler up with some bricks/cinder blocks. That way it drains the water out as the ice melts. Just pack the cooler with 40lbs of ice and fill it every couple of days until you process it (I usually get it done by the 5th day).
