I recently cured/brined a whole wild turkey in kosher salt and sugar for 24 hours. I then wrapped him in cheesecloth and basted with a mixture of honey, lemon juice, salt, pepper, cumin and some beer. I put it on the smoker and wiped him down about every hour for 5-6 hours. It was as good a turkey wild or domestic as I have ever had. Good luck!

this is what one of the guys at the lease did... it's simple and the best I've had... chicken fried with cajun fry mix from the store. I've done it chicken fried, but something about that batter just sent it over the top.

We always slice the meat off the Breast. Season how you might like. (Season Lightly). Eggwash, roll in flour. Let set in Icebox or IceChest. In bag for 30-minutes to an hour. Pan-fry on low. Make gravy out of the grease. Good-Stuff.
