I will look for one I used two years ago. Tried breakfast sausage and it didn't turn out that great but I ended up making meatballs that the whole family enjoyed. Used mostly divers and it was still pretty good. Only draw back to the recipe shows up about two hours later when you should be outside away from any open flames

I get mine done at two places. Millers meats in Belton does a great hot link style sausage. We do 2/3 pork, 1/3 duck goose. 1/2 was still pretty "ducky".
My absolute favorite is from billideauxs meat market in lake Charles. My mom takes a load over there. I get their green onion smoked andouille sausage it is outstanding. All my friends that let me hunt their land have already put in their order.
Beware- you can break a tooth on the steel shot. I did.

Now that even sounds like it is Arse whoopin good.
so far as the shot, I bit one the other day and busted a dern cap on a tooth. I am considering a Harbor Freight small hand held metal detector. that way I can fan it over the brest meat and narrow it down. Saving one tooth would pay for the detector 10 times over. Not to mention I rather not go to the dentist if I don't have to.

Three lbs wild hog, one lb deer and one lb duck. Add some jalopenos and summer sausage seasoning from "The sausage guy" (New York). If you like cheese in the sausage, you can deduct 1/2 lb from pork and deer and add one lb cheese. I prefer to put the cheese on it after I slice it and put it on a cracker.
The sausage guy from new york has some great seasonings!
