A while ago our family went on a Bison hunt with MMK Outfitters who were amazing, I would recommend them for any kind of hunt you are looking for, and we have been saying we would post the video up for everyone to see for a while now so here it is http://www.youtube.com/watch?v=OAB_z9slEC0&feature=plcp

any kind of hunt you are looking for you are right about that, from their website... "both high fence and low fence habitats"
