From Gonzales (so you'll know my preferences and I'll start there)

Gonzales- cow palace it's at the auction on 90a, great steaks and decent salad bar.
Luling- city market or Blake's if the BBQ is closed
Lockhart- Chisholm trail on 183, it's where the locals get their BBQ
Austin- catfish parlour, threadgills,
Columbus- schobels
Hondo- Herman sons steakhouse
Utopia, lost maples cafe
Fredericksburg- Andy's diner
Junction- isaacs
Fort Stockton- kbobs
Boerne- Fritzes BBQ and riverside market
Bergheim- obriens
Brownwood- underwoods
New braunfels- pats place
Bulverde- antlers
San Antonio- smoky moes on bulverde rd, bigz burgers, biff buzby's, bourbon street, bluebonnet cafe on ww white

I don't really care for chains but if there's one place that's above par I'm all ears. I do love a good mom and pop place and if you think I'm missing something in the area I listed or even elsewhere I'd love to hear it.... underwoods? really? sorry but my stomach ejects every time i used to eat there. prima pasta, gomezs or humphry petes. last time i went through they were building a new chinese food buffet.
