We have in the past cleaned, skinned, deboned, pkg'd about 6 to 8 animals every wk end, and sometimes more. We usually debone the hams whole into a frezzer bag, backstraps and tenders into another bag, and trim into the last bag (s)...Shoulders go out whole in case game warden wants to check. Skinning we use a lot of knives..Knives of Alaska caping knife w/the cleaver, always a good pocket knife, case ect, rarely use many of our fixed blades that are longer. I've built several that are small that work well, but the pocket knife w/a very sharp longer blade and the spade blade will do one animal handily..DD

I have quite a few I like, but when push comes to shove I use the old standby which is a Russell Belt Knife.

You can't go wrong with a good ol' fashion buck knife. I have several, they stay sharp for quite a few skinning chores then are easy to sharpen up and they take a razor sharp edge....

For skinning and caping I use havalon knives as I clean over 100 deer a year it makes it so much easier not having to sharpen blades.

Benchmade model 522. Ive field dressed LOTS of animals with one. Ive had two in auto, 154cm, in the past. My current two are in 440c. Both with the simple axis lock. I can open and close the non auto's with one hand. 440c does everything I need it to and takes a mean edge. To include opening tin cans of ranch style beans to go with whatever I just culled.
Benchmade makes some of the finest production knifes on the market. Period.

I have a LOT of knives but I'll have to say my favorite for skinning and boning is this 3" ceramic paring knife. http://www.harborfreight.com/3-inch-ceramic-paring-knife-98183.htmlIt cost me less than 10 bucks, it never needs sharpening, and if it breaks, I just get another. It is also super light and fits in my fanny pack perfectly.

Thanks TB, I really enjoy them. I've been through a good handful, and those two stand out from the rest for edge retention, and usable design.

The two I use the most are my Dozier White River Skinner and my Bill Middlebrook Damascus Skinner with Kudu Scales.
