Can anyone recommend a good meat cutter for game processing in or around Austin (including towns to the south, such as Manchaca, Buda, San Marcos, etc)?

BonTon Meat Market on Hwy 21. They're just south of Uhland.
From I35 in Kyle go east on FM 150 to TX21, then left. BonTon will be on the right a couple miles up the road. It's in the middle of nowhere.
They do good work and you get your deer back, not someone else's deer. I usually get steaks and bacon-burger (25% bacon). Very reasonable.

I appreciate the information on local butchers. I basically want to make sure that I'm going to somebody honest who will do a good job and not pull a bait and switch game.

Try bontons, kliens, Texas sausage, or Hudson's for Austin. Don't forget meyers in Elgin!

Another vote for Johnny G's. You'll receive your own meat back. He makes good quality smoked sausage, and he is reasonably priced. Hudson's on South Congress is the worst I have ever used anywhere. They will admit, if asked, that you do not receive your own meat back, and the prices are high too. The sausage and jerky they gave me was inedible. Down the road a bit in New Braunfels, Granzin's is my favorite, but Johnny G's is definitely good and I use both every year.

I like the flavor of Hudson's sausage but they're using the man made cases now and they're too thick. I don't like hard thick cases.

Another vote for Johnny G's. You'll receive your own meat back.
X 2 - Use to work there back in the day and Johnny was adamant about keeping customer's deer separated - new owner apparently keeping with tradition.

Brizendines in bertram is supposed to be really good. Their buck sticks ive tasted are really great.

Not in to the community grind that Hudson's produces at all, plus they are too expensive.

They are not bad, but you feel like you got the short end of the stick when you walk out with less than 2 grocery bags of meat after taking them a nice deer. They say, "we don't mix our meat with other meat.. blah blah blah".. but I still feel that I lost meat when I walked out of there. I would try Hudsons on S. Congress... they are under new mgmnt, but they were not bad last year when I used them. I am looking for a new place on the way back from Rocksprings myself. I may stop in and check a few out along the path I take through Kerrville etc this year. One in Stonewall was good, according to my buddy that used them last year, but I like to hunt all year around and the one in Stonewall is only open during deer season. R
Hunting is easy..it's getting permission from your wife that is tough.

Any votes for Smokey Denmark's? Their on 5th street in Austin.
I had a pig processed by them a while back. It turned out pretty tasty.
They currently have my red hind and my elk.
They are the only place I have taken my game, and have not tried any others.

Pretty much all of the places that I called require feral hogs to be skinned prior to processing. Are there any places (or private individuals) who will take and process hogs just field dressed (unskinned)?
