Thanks for that link. That is extremely interesting.

I mentioned earlier doing the exact same thing with doves but 2-3 days max. I actually had some in for 5-6 days ONCE because I traveled out of town with work. I actually did notice an obvious difference in the texture. Was scared to freeze them and not remember which ones they were so I fried them that night and didn't let the kids eat them. They were really good.

Going to share this with the hunters that I know.

I'e never aged any at all, usually leave the birds as is when they hit the water, then as soon as I'm home we breast them out and soak the meat in salt water or sprite for an hour or two then freeze them in a fresh bag of water. How exactly do you age them and for how long? I'm intrested in this, how differently does it taste?

We usually just breast birds out and keep one wing attatched till the house..... then cut breast off of birds soak in ice water for 2 days then bag in fresh water

Aging intensifies that game flavor so if you dont like that flavor to begin with it is no good for you to age....
