Any Cajun cream sauce recipe will work. Blacking is easy soak duck strips in milk over night. Get cast iron skillet very hot.. season with any Cajun seasoning. 2 min tops each side.. I usual do 1 minute each side.

Deer is ok, but most of it beside the steaks and back straps are mixed with pork, so yes it will taste better to those with a pallet for pen raised kinds of meat. Duck cooked rare is hard to beat. There is a reason they almost shot ducks into extinction and a reason long after it was illegal they kept shooting them for the outlaw market. Duck meat in the day served at fine restaurants is like going in today and buying 45 day dry aged steak. A canvasback brought $5 each wholesale, don't know what it cost once it was in restaurant's but that was $5 in 1912!! One duck prolly was as much as two days pay back then and they shot by the boat load. Anyway duck cooked rare is hard to beat, and IMHO 99% of people now days just don't know how to cook it and over cook it all the time. That's where you get the liver taste from. Would you cook a T bone or a deer steak well done??

Never heard of doing it that way. I bet if you soaked it in Italian dressing first that recipe would be awesome

Boiling two ducks until the meat falls off the bone then using the water as stock for gumbo and adding the duck meat back in is pretty good. best gumbo I ever made was 1 mallard and 1 pheasant. Plus the other stuff.

Plus the other stuff. I agree, duck is pretty good when you chunk it in a pot with about a dozen other things

I can understand those that don't like the taste of duck. They either don't know how to cook it, or ate duck cooked by someone ignorant of how to cook a duck. Given either one of these scenarios, duck tastes horrible. Cook it right and it is hard to beat.
