I took my first of many deer to come this year last Saturday up in Oklahoma on the opening morning of muzzleloader season. She was a nice 90-pound field dressed doe. Anyway I started the first of many runs of jerky through the dehydrator tonight, and I was wondering if everyone would like to share recipes. I use one my cousin gave me, but I have modified since I like it really spicy.

Okiebug's Jerky Recipe
1 Cup Soy Sauce
1 Cup Worcestershire Sauce
1 Tbsp Garlic Powder
1 1/2 tsp Black Pepper
1 1/2 Tbsp Liquid Smoke
1 Tbsp Crushed Red Pepper
1 Tbsp Chili Powder
1 tsp Cayenne Pepper Powder

Mix meat and marinade then place in a zip lock bag over night in the refrigerator. Place meat strips in the dehydrator and run until desired dryness.

Look at Alton Browns' web site on www.FoodTV.com. He is the Good Eats guy. He recommended using a box fan and A/C filters to make jerky (cool air vs. warm air method). His recipe also has a jerky marinade and he recommended venison as a substitute for beef.

I am out of deer meat, but I plan to try this method. He claims it doesn't dry the meat out as bad as using a dehydrator.

The only difference with mine is that I do not add chili powder but do add tabasco and a little teriyaki sauce.

Here is mine,

3# meat(venison or otherwise)
1/4 cup soy
1/2 teaspoon cayenne
1 1/4 cup worst. sauce
2 teaspoon La. hot sauce
1/2 teaspoon cayenne
1/2 teaspoon garlic powder
1 tablespoon liquid smoke
1/4 cup dark brown sugar
1 tablespoon salt
1 tablespoon cracked pepper

Marinate at least 24 hours stirring occasionally. Drain and pat dry before cooking.

I just use whatever I have in the house at the time but have found one that works pretty good:

2-2.5 lbs of deer
3/4 cup of barbecue sauce (has brown sugar in it)
1/4 cup of Worcestershire
2 tbsp of Tabasco or Lousiana
2 tbsp of cracked black pepper
2 tbsp of red crushed pepper
2-3 tbps of Fajita Seasoning (has garlic, pepper, and salt in it)
1-2 tbsp of Tony's

Will try the others that yall mentioned to compare thanks for the post

This is my receipe for crane jerky, but deer can be substituted for the crane.

1 teaspoon garlic pd
1 " onion pd
1 " celery salt
1 " paprika
1 " liquid smoke
1/4 cup soy sauce
1/3 cup worcestershire sauce
brown sugar to taste
black pepper(however much you like)

WHHHATTTTT....crane. I think the air is poluted down there. How do you obtain crane. I can see it now. Man in willow tree with bow near pond...LOL Just had to bite on that. No offence just poking fun.

kansasmedic LOL... crane is easy to get once the sandhill cranes start piling in down here. I have seen wheat fields covered up in them and the air buzzin with them trying to sit down.



In Memory of my 36 yr old nephew Paul Dobbins that lost his fight to cancer... Never GIVE UP !!! He fought it hard and was determined all the way to the end to beat it.
