put them in water in a tub or something like that then pour in salt let them puk the mud out wash them good then boil.

put them in salt water too long will kill them..The only true purged crawfish are held in suspended traps for 48 hours where the cannot eat and defecate only..I can think of only one farm that will do this anymore and they sell them for primo prices...many crawfish suppliers say the saltwater treatment is "wivestale"..who knows..

LOL!! That maybe true!!! I do it any way.

Ya gotta wash them good any way becasue the water they are stored in is nasty!!!

I take them out side, put them in a tub or something, wash them off good with the water holes on full blast, let them sit in water for a few hours, and I throw some salt in there for taste.

Having lived in south La. for almost 50 yrs. the salt only helps wash the mud off. As for suspended traps, all of the traps that i've used or seen sit on the bottom. Some say the "spillway" crawfish are cleaner than pond ones because of the moving water. One thing is for sure, crawfish live in mud most of their life.
The way most of us purge crawfish is the way Guy mentioned above. Get the mud off and they will taste good.

LOL...I had a client 2 weeks ago that insisted that I use straight runs for the catering job..what a mess..mud,grass, baby turtles and even 1 small 6 inch snake..not sure what kind it was but it was dead already...I`ll stick with the washed and graded and pay the price...

When I was in college I would run traps and help processs for extra money. I've boiled them hundreds of times when growing up and living in LA and the way above works fine. You will see them spitting up in 1/2 an hour. We usually have an ice chest for purgeing and it works great. Rinse them well and boil them. I've never heard of suspended traps before and I remember catching them in the same way, same ponds or swamps, when crawfish was ONLY cool to eat in Southern LA. Suspended traps sounds like a sales gimic.

Thats funny right there . The only thing that I can think of worst that a bunch of pi$$ed of crawfish, is crabs. Let a bucket of crabs dump out in your boat and you'll be for a fight of a life time.

not really sure what the puking would do anyway..when you pull the tail away there will always be the Chit line through the tail meat,and the gray and orange(fat)matter...

If you were catering to some cajuns, you could have charged extra for the turtle and the snake. Sounds like a nice garnish to me.

several people did ask if it was a soft shell...LOL..Delta Crawfish company still sells truly purged crawfish that are held in suspended tanks..like I said you will pay a premium..Seen them firsthand and they have no chit lines,and they only thing you can see is the orange fat that is on the tail when separated...For some interesting reading on truly purged crawfish,go to thefishsite.com and do a search for purged crawfish..there is a article written by 4 LSU professors..

we buy from a guy in lousianna that sells craw fish to all the stores and restraunts here and he sells purged or unpurged ,,we bought a bag of purged and there was a very noticeable difference in the unpurged ,they were the cleanist ive ever ate ,will ask him how he purges them next order ,,,,,

turtles is right...LOL..I have never had softshell crawfish and have never seen them sold...I would be willing to bet you would have to pay a pretty penny for them..Im sure the locals in S.Louisiana can get them easily..I just bought 6 dozen soft shell crabs last week and cleaned and froze them...Pull them out individually,saute with black pepper,REAL butter, garlic and a little old bay...WOW..oh yeah thats right,we are talking about crawfish...

..I bet the purged were expensive..Last year was the laast time I bought purged for a catering job and payed 5.75 a lb...I could tell a difference but didnt think it was worth the price jump...oh well the price gets passed on..I did hera there was a farm near Beaumont that was selling nothing but purged..Mom and pop operation..

Acually he is the only one that i've ever heard of raising them. He raised them in trays of clean water and as soon as they would, I think he called it, "molt", shed their shell, he'd take them out and freeze them.
We did pick on him about watching them. We would ask him if he sat there and sang: 1 little, 2 little, 3 little crawfish, 4 little, 5 little, 6 liittle, crawfish.
He didn't think it was cute. He'd make us go clean the fire truck or pick up sticks in the yard.

Soft shells are great to eat fried, I often eat the tail shell and all on them in a boil.

the crawfish should start molting around the beginning of june when they stop selling crawfish...it all depends on the weather also..they will begin to turn almost black before they molt..I dont know of a whosaler in the dallas area that sells soft shell crawfish..best bet is to contact a farm directly and see if they will ship them to you special order..

Are you talking about softshells only? I always find a few in the batch. I would have no idea where you could find just them.

Regular can be found at Fiesta grocerys stores, World Markets, and some Tom Thumbs. It can be hit or miss. Some might know a lot better than me. The ones I did last weekend were from Fiesta.

I have been lucky, and have had crawfish 3 times this month. We got them for just under a dollar a pound. On the softshell note, they are just like crabs, and certain conditions can make them molt. They don't all molt at the same time. You can induce the molt by doing certain things, just don't ask me what they are. I know a few people that raise softshell crabs.
