Anybody know a good way to prepare it? I got some from the father in law and was wanting to try it this week but don't wanna screw it up. Heard it dries out real quick. Thanks!

Chicken fried is awesome. I'd use buttermilk and double dip each steak in the egg and buttermilk mixture coating with flour/salt and pepper mixture. Also make sure you pound out the round steaks with a meat tenderizer to about 1/4 inch thick. If your going to try and grill it don't cook the elk based on the color or you'll over cook it and dry it out. Cook it based on time. Fast and hot for steaks flip only once. Be extremely careful elk is just too good to mess up.

Chicken fried is outstanding.

Another solution is (If you like roast) cut it up into cubes and throw it in a crock pot along with 2 cans of golden mushroom soup, one can of cream of mushroom soup, a packet of lipton onion soup and 3/4 cup of red cooking wine. Let it cook all day and it will be perfect come dinner time. Just make some rice or mashed potatoes.
