Cool video! I've done several deer that way over the years and it works about the same way.

We've tried using air on hogs but had very limited success. It seems to work better on "loose-skinned" animals, if that makes sense. It works pretty well on small pigs/shoats. If you try it on a big hog, with a really thick fat layer, you wind up aerating the fat layer...the hide doesn't really seperate from the carcass. You wind up with a thicker, but spongy, fat layer. Looks weird too.

that's cool...gonna have to try that.

My wife also informed me when she was in culinary school they would do this with ducks after taking the feathers off, they would blow air under the skin, leave the skin on then deep fry the bird, she said it made the skin nice and crisp while the meat was moist.

we use to skin goats that way
