The Red Stag I had in Germany was excellent. They are a subspecies of deer, in the same family as Elk, and Elk is excellent.

very good IMO. I have heard that if you shoot them while in rut its not as good but im not sure.

It is very good eating, I cannot tell it from elk at the table.
There have been some very good priced red deer hind (cow) hunts posted in the outfitters forum lately.
lf the saying "Liar, Liar your pants on fire" were true Mainstream news might be fun to watch

NOOO they are horrible...anyone you shoot you should just send all the meat to me and I will dispose of that nasty stuff! It's great stuff. Right there with Axis IMO

I've only had WT and axis so hows the stag stack up?? It's good stuff but just like any where else better the grass better the taste. Try to stay away from the ones on cedar.. Find an outfitter that is fond of alfalfa

I've killed and eaten rutting bulls and for my money there is no comparison. Later, Baker I had 347lbs of elk meat from the first bull ELK I killed during the second week of Montanas rifle season that I could barely eat. Stronger than any whitetail I ever killed. Chili was difficult to eat from that bull. The outfitter said that bull all through bow season had a 40 to 50 cows and one bow hunter missed him at less than 15 yards. Rutted down anything will taste woorse than if the animal was killed pre rut. IMO if you want the best eating elk or red deer bull, kill it pre rut right as velvet is shedding is a good time if possible. Diet also has a lot to do with taste. Best Bull Elk, pronghorn, whitetail or mulie bucks I ever had were taken either from alfalfa fields or very near them.

I cooked some my red deer stag round steaks done chicken fried style last night along with axis and addax. The axis and addax I've cooked before we're again great. Now the color of the stag was darker in color but let me tell you it was great better than beef and we had a very hard time telling the difference between axis and addax. Jmo
