I've heard it's good to eat from lots of guys. But if you consider what coons eat, then would you eat the samething? Rap the little suckers in foil and grill them. That's the only way I can think of.

I've eaten racoon many times, pretty good. Always just roasted it in the oven with carrots & potatoes. Make sure all the fat is removed from carcass, or it well be nasty. And get a coon that has been on a natural food diet away from any garbage, waste, ect.

I figured the the fat made it taste good, it sure does in beef. But I guess beef doesn't have thumbs or canines.

Make sure to remove the glands in the upper arm pit area and the hind legs. Small gray/greenish colored glands about the size of a pea or little larger.

As sillyhorses mentioned above,remove all the fat; then parboil and BBQ it with your favorite rub and sauce or if it's a small one, chicken-fry the quarters like a rabbit or chicken.

BBQ coon is great!!!
To repeat what others have said though (especially where you get your coon)- Remove as much fat as you can. It is the nastiest taste if not removed.
We have a stupid season for them here in Missouri.
