Seriously, there has got to be recipes for cooking a mature Aoudad. My problem is that I've been raised, and so has my son to eat what you kill. Please don't give me the old "cook on board, throw out Aoudad and eat board". Thanks folks.

Sausage or jerky if you have a good set of teeth. Grind it course and it makes good chili. I wouldn't plan on any steaks or roast.

I was told by a guy that lives NW of Bandera that killed the big mature ones all the time that he would immediately skin them and then gut them. He would then hang them in a very CLEAN walkin cooler for about 2 weeks to let them air out, age and tenderize. He then processed them himself into to steaks, hamburger, etc. He told me that the steaks honestly tasted like beef steak after doing this to them. I have cooked many young rams and many females to eat. I would clean and care for them like whitetails and hang in the cooler for 5 days to age. I have had lots of tamales, jerkey and dried sausage made from the also. Most of what I have killed have been young rams and females though.

Just donate it to someone. There is someone who NEEDS that meat.
I was raised with the same "eat what you kill" theory, and I go by it for the most part, but I don't always go by it anymore. I think now, if I ate something like an Aoudad, I'd just be eating it to make myself feel good about staying true to the old Theory. On something like and Aoudad, if you don't know what you're doing, it can be turrable. I don't go around shoot black birds, but if I kill a big hog or an aoudad, I donate it becasue someone NEEDS it more than I do and I'm not trying to prove a point.
Just think, if you pay to have it processed or do it yourself and then eat it and it's awefull, what are you going to do with it?

take the roast and throw it in a crock pot as your favorite roast recipe instructs you. Everything works out in the crock pot

My family is being raised on wild game meat, which includes aoudad. We cook it many different ways. We hang them in a cooler for 2 weeks or so, and then just treat it like beef. I can say that yes the ewes are better than an old ram. We make jerky for hamburger out of it. I couldn't say anything bad about it.

First off, now I know that 99% of the people that say Aoudad ain't worth eating, haven't eaten it. The "fact" that it's just no good is an urban legend. To get a base line on the taste, my son and I took a section of the back strap, coated it in olive oil, salt and pepper and put it on the grill. The closest thing it tasted like was beef. With a little tenderizing, and some of our other game recipes, can't wait to cook some more up. Of the three Aoudads we shot (all mature rams), and 4 Javelina, we brought home all but 3 Aoudad shoulders due to airplane weight costs. Try it before crucifying it.
