how big is too big? My buddy shot a 250-300lbs boar, it had a really bad order to it. i heard that if the hog has a really bad oder the meat has a really bitter tast to it.
Is this true? are they still eatable?

General rule of thumb I have used in the past is no Boars over 150lbs. Once they get up to breeding size they develop the strong oder and foul taste. I have never had a problem with sows of all sizes.

Don't eat it.....will turn you on feral hog. If it stinks, in my opinion, it ain't edible.

Bleed it out in the cooler for at least a week.Some people put lemon juice or vingar on the meat in the cooler.All i do is just bleed it out at least a week on alot of ice.Drain the water off once the ice melts.then add more ice.When cooking debone the meat that helps too.As picky as my family is they will eat all the pigs I bring home. Its all about care of the meat.

Hey's right, Get it off the hog ASAP, cooler it in ICE....as the ice melts, completely drain it every time you add ice, for several days, in my honest opinion, its a crock about one's smell affecting the taste...its blood that makes anything taste bad...and I ain't seen a hog we didn't clean up and eat, don't let someone talk you into that crap...

The first wild pig I killed was about a 300 pound boar. He was with a couple of 200 pound sows but I wanted the boar. He stunk to high heaven. It was gross. I had him processed and he tasted like he smelled and we wound up throwing it out. You could smell it in the house for days after cooking some. So, I always thought after that that big boars were no good to eat. Fast forward 20 years. We trap and shoot pigs of all sizes and I never ran across the stinky boar thing again. As lots of you know the big boars usually run solitary. All the big boars have been as clean smelling as the sows, who usually run in groups with other sows and all the little ones. I thought about it on occasion and finally I heard something thast made sense. The only difference between the stinky one I killed and the ones since then is that the first one was with sows and trying to pork them and the ones since were solitary. I heard that the smell comes from the boars being in the breeding mood. Hormones, I guess. When they go back to being solo all that subsides and they are just as good as a sow. We eat big boars all the time now but if I see one with a group of sows, I am going to shoot a sow and let him go.

I might could believe the hormone thing, but I still think if he's iced and drained good it will be ok...
As for not shooting him, SHOOT THEM ALL, if you want to eat them fine, or not fine, but SHOOT THEM ALL

You are right, shoot them all, I really meant I'll shoot a sow FIRST in that instance.

I have killed some big McNasty boars.Its all about processing the meat RIGHT.I believe in you kill it you eat it.Or give it away.Just bleed it out good.I will rotate the meat from bottom to the top midway through the process.Thats just what I like to do. later....

Thanks for yalls opinions but i just could not bring myself to gut and clean that big stinker. I have shot sals around that size that did not smell that bad.And good eating.

I like 150 or under. Let set on ice for a week drain water and add ice daily. A little lemon juice and apple cider vinegar the day before you take off the ice. Maybe 1/2 cup each for every 100 pounds of meat. There will be very minimal blood. Taste better than beef. IMHO

I've shot two three hundred pound boars in the last 3 months. One smelled like piss and testosterone on the outside from doing the things boars do. I grudgingly cut him open and find the meat to smell like meat. It was a damn good hog, no wildness at all to him. The second didn't smell as bad but turned out to be great. If you throw the meat in the cooler and spak it a couple days and it still smells like pig urine/stink then throw it away.
