.....B&K PROCESSING IN BRONTE TEXAS!!!!!!

Back in November I took them a 230lb hog I shot and had it all made into breakfast sausage. Based on other pigs I had processed in the past I knew I should get about 60lbs of meat off of this one since the bullet did no damage to the shoulders. When I went to pick up the meat there was only one box with a little over 30lbs of meat in it. I knew something wasnt right but I wasnt going to argue with the girl since there was quite a few people there waiting to pick up thier meat as well. Well earlier this month I get a call out of the clear blue from Brian at B&K telling me he still had one more box of meat of mine that they failed to give me when I picked up my pig. After a short conversation he told me he would try to work something out with some people he knew to get me this meat so I wouldnt have to drive 4 hours to pick it up. Well a few weeks pass and I guess he couldnt get it worked out so he calls me up and tells me he will just ship it to me on monday. Well it got here today and its still frozen solid as a rock.

It would have been real easy for them to just ignore the fact they forgot to give me this box of meat and it would have saved them a pretty good chunk of change on shiping it to me but they didnt. They followed through with it and made sure I got what was rightfully mine.

Brian's a good dude. They misplaced my horns from 2010 and he turned the place upside down to find them. Finally got them about 11 months later...

Get all mine processed there. Kids love the jalapeno/cheddar sausage. Glad you finally got it.

X2 To show our support to honest people like this we should write some reviews on his website or the local chamber of commerce. Refreshing to here a success story about a processor. Like you said he didnt have to do this.

I'm glad you got the meat and he is a good guy ........................................ but isn't it sad when what should be common place and the right thing to do stands out as unusual.

Those kind of people are few and far between these days, kudos to them and you for sharing!

I remember when that place first opened back in 95 or 96. We hunted north of Bronte and had all our deer processed there until we lost that lease. Great guys and a GREAT product as well.

I finaly got around to cookin some. I have been taking my critters to them since 2003 and this is the best I have ever had. This batch is the "Hot" and the stuff I picked up in November is the "Mild". Usually the Hot is too hot for me but this it PERFECT!

Interesting, I would have thought a 230# hog would render more than 60#. Is there a "rule of thumb" ratio of return such as 4 to 1 or 5 to 1 that a person can use? This is close to a 6 to 1.

About 30%-35% of live weight is usually what I see when made into 100% breakfast sausage. But that is when the bullet doesnt ruin any meat. If your bullet strikes a shoulder or other meat locations then your percentage will be less.
