I had some venison jerky made this year and to be honest, I don't really care for it. The guy that made it went WAY too heavy on the black pepper.
I have used jerky with dehydrated vegetables and beef boullion to make hobo stew while backpacking. It came out pretty tasty.
Does anyone here have any other good recipies using jerky?

Occasionally we'll dice it up fine and put it with Rotel, one can cream mushroom soup, and a block of velveeta for some queso!

I got a jerky gun and use ground meat with it. No wet marinades but you can mix it together and let it sit overnight for the flavors to get all about before cooking. I tried the seasoning/cure that came with it and it was ok. I like playing around with spices though so didn't bother to buy more.

If it looks good, eat it.

Rocks are cool, also kittens.

Then I would do a brine first with your cure (you could add a bouquet of herbs like rosemary, thyme, and parsley) , then do a seasoning of sea salt and FRESH ground black pepper corns, then lightly smoke it with oak.
