Not really very close to Spring, but Jacksons Deer Processing in Crosby is good. They are close to Hwy 90, easy to get to.

R&D game processing a.k.a. woods and water taxidermy on Treschwig by carters country is really good. They vacuum seal all the meat too.

J&M near Hooks Airport on Stuebner Airline makes good smoked link sausage. If you want good breakfast/pan, I don't recommend them for that.
