For Texas deer hunting you could probably use either for the rest of your life and the deer wouldn't know the difference. The 25/06 would be slightly flatter shooting and slightly less recoil. Most of the cartridges that we like to debate over, are pretty mucn interchangeable in the field. The bullet is generally more important than what's on the headstamp.

Most elk hunting outfitters websites state the MINIMUM recommended bullet size is .270. Not sure if the individual States have a minimum caliber for elk, but I would say the .308 (30 caliber) would be the minimum I would use.

It might be harder to find a suitable factory round for the 25-06 if Elk is really a possibility. Handloading gives you a lot more options.

The last elk hunt I was on, the guide/outfitter required the .270 as minimum caliber. (and the .270 did the job) Go with the .308. Ammo is available most everywhere and you have a wider choice of bullets, not so with the 25-06.

I don't think I would hunt with an outfitter who thinks he knows what caliber of rifle I shoot best.

.25-06 for sure. Use the right bullet, and put the shot where it needs to be, and it's no problems. I've had a hunter drop a red hind at around 100 yards in her tracks with a. 25. But I like long action myself, and I just don't care for the .308.
