What is the eaisest way to obtain accurae and detailed graphs from above. Ive used google earth but want something bigger in greater detail.

What are you wanting to be able to see? I can see my deer blinds and feeders on google maps and google earth.
I would think the next step would be finding a satelite imaging company or taking some real aerial photos.

Bing maps has excellent "birds eye view". it's at an angle, so it probably wont' be best for a giant map. But it's close enough to see cattle.

teraserver.com has multiple years worth of images for a given location. Some times they are very detailed. Sometimes they are not, depending on where you are. You can order large prints or JPEG files from them.
