I don't have a recipe, but I have found that I like the texture of chili if I put the raw ground meat into my broth/water/beer mixture and cook it that way.

Put a can of refried beans in there toward the end. It'll thicken it without making it bland like mesa flour.

Put a can of refried beans in there toward the end. It'll thicken it without making it bland like mesa flour. That's a good idea. I've used a hand blender for a second or two. I'll have to try refried beans next time.

The only time I put beans in chili is as a thickener. I use refried beans with jalepenos.

I've started tossing a little can of those chipotle peppers you get on the Mexican isle. They add some pretty good flavor and little bit of kick.
Shoot. Eat. Repeat.

I've started tossing a little can of those chipotle peppers you get on the Mexican isle. They add some pretty good flavor and little bit of kick. I do that sometimes. Another thing I like to do is go to Central Market to get my spices. They have a bulk spice section, with 20-30 different types of chile and chili powders. They are very cheap, and better than just plain old McCormicks or store brand. I also do this when making chorizo.

If any of you are ever in Ft. Worth, Pendery's ( http://www.penderys.com/) has a chili, spice, cookbook, gadget selection to die for. They've been in the Chili business since 1840. I see you can order on-line. That'll save me a two hour round trip drive.
