My dad and I have been making deer sausage for as long as I can remember.

Cut deer meat into smaller chunks or strips (easier for grinding)

Pick up a box of bacon pieces from Walmart

Hardest part about making good sausage is finding good seasoning. We always went to the local family owned grocery store and bought a lb or so of their seasoning.

Grind the deer and the bacon pieces together with about a 70/30 ratio of deer to pork.

Once grinded its time to mix in your seasoning. What we always do is mix together a bowl and cook a patty or two for a taste test. I honestly couldn't tell you how much to put in. Depends on your taste and how spicy you like it. Once you find the taste of your liking you are ready to grind the next batch.

Feral hog is a very lean meat. Bama's bacon is a good idea. You need fat. I have some good seasoning mix recipes you could work with. Give me a day or so and I will post them. what kind of sausage do ou want to make? Polish, Italian, Breakfast? let me know.

CALL rio seasoning in huntsville texas they have the best seasoning ive found and are priced extremely good
