Looking for a processor that is clean and makes great sausage ect. The SA and Boerne area would be good.

Not sure what is available in San Antonio are but I use Rust Game in New Braunsfels off of Hwy 46.

Dzuik's in Castroville or Schott's in Helotes or Bernhardt's and/or Woodbury's in Kerrville/Ingram are my favorites.
Are idiots multiplying faster than normal people?

I have used Shotts just outside of Helotes on hwy 16 for many years and I would have to say they make the best sausage I have tasted besides my own but that just my personal opinion. Mike is a great guy and the place is very clean.

I have used Rhodes Brothers in Kerrville for almost everything. Very good dried sausage made from venison every year.

Schotts in Helotes makes awesome dried sausage. Ive also used Woodburys in Ingram and they make good hamburger patties and sausage as well.

schotts in helotes is also very good. you can't go wrong with schotts or presa.
For it is not the quarry that we truly seek, but the adventure.

presa lockers downtown is my favorite. You may have had different experience than me, but I'd personally stay away from Presa. Took parts of 5 hogs in for sausage and what I got back was really rank. It was not the meat I dropped off. I've put hundreds of hogs in the freezer, so I know what it is supposed to be like. I even kept a lot of cuts off all 5 of the hogs, and it was all great. What I gave them sat 3 days buried in ice (drained regularly) when they got it. What they gave me back tasted like week old road kill and stunk up the house. Could not give it away. I'll process it myself, or pay a bit more to know they are not giving me someone else's hog that laid in the woods overnight in hot temps... That was some nasty sausage... Granzine's in New Braunfels makes some really good dried sausage, pan sausage, and fresh link.

Haven't used Presa in years so don't know if they've changed their operation, but I'd stay with a smaller processor if you expect to get your same meat back, but that said, their are still no gaurantees you will.
That is why I've done my own for years after learning the hard way, and it's a lot cheaper.
Thursday at 12:45 PM #33 Once i learned that i didn't "NEED" to kill something, and that if i did kill something all the fun stopped and work began, i was a much better hunter.

I've taken quite a few deer to presa, and always gotten the same deer back i've given them. i like their bacon burger mix, had a few ham steaks and backstraps as well, that was from a young doe i brought in, not a buck. I have taken them a old nasty rutting buck and what I got back was, well, the meat of a old, nasty, rutty buck. Plus its convienant as my taxidermist is upstairs. I do process several myself each year as well

Had bad experience with Eddies, all my meat was full of hair and even found bullet fragments. Got a full refund but out venison. Ive tried most all places in san antonio and presa is the best in my opinion. I prefer to do my own processing if time allows.

Schott's in Helotes and Granzin's both do great work. Presa used to be good also but I haven't taken anything there in a long while.

Schott's is the best around there. Best sausage I've eaten. Woodburys rip me, my brother, and dad off so I won't be referring anyone to them. Rhodes does good work too. Little bit further from san antone though.
