I need some info on pickling some banana peppers. They are growing great right now and I need a good recipe. I have some jalapenos to mix in with them. I tried a recipe I found online but they are pretty mushy but good flavor. Any tips on making them not so mushy would be greatly appreciated.

I do my jalapenos by slicing them, packing them in jars, and pouring a hot brine over them. The brine is 2 cups water to 1 cup vinegar with salt.

You can also chop them in your processon with an onion, and make a pepper relish. I cover with vinegar, add sugar, and salt, then bring to a boil. Dip the relish out with a slotted spoon, and put in pint jars. These jars will seal.

You can add a grape leaf in the bottom of the jar and it helps to keep them crisp. You can add pickle crisp which is calcium chloride and it will help also. 50/50 Vinegar and water and some Kosher salt is what I use on mine.
