I usally stand on the head and on the hind end and pull up from the top and bottom side of the breast meat pulls out wing and all. Then I pull off the feathers and wings and wash off. if Im going to fillet any ol knife will do.

But it seems every year you talk about a knife so I use a glestain 270mm knife for just about anything

Stiff fillet knife is preferred, but it goes so fast, anything with an edge will do.

My step dad got me one a Schrade Old Timer a couple of years ago. I like the curved pointed tip, it makes getting the meat between the breast and the wing easier.

It's just like this one, except mine has a leather sheath currently has dried teal blood on it.

I cut meat for a while in college and fell in love with Victronox knives. I now have a set similar to the one below. The fillet knife in this set is what I use to debone the breast of dove and duck.

What works best for me is a plastic knife or a butter knife. It's a duck not a hog! Come on now....

pretty much any knife around me will work but it must be sharp!

I would suggest getting something that can be used for more than just duck hunting. I have one of these Buck knives below, very impressed with it. Had it a year or two.

I use a dexter-russell boneing knife. Its very sharp and holds an edge better than most knives that cost twice as much. I paid around 25-30$ for mine.

I've got one of those I've had for thirty years. High-carbon blade. Retail and Wholesale boners and butchers have always used those. There's another one similar made by Green River, inexpensive but excellent.
