You can throw the kitchen sink in this one.
Here’s a healthier alternative to the usual bacon wrapped dove breasts.
1 tablespoon olive oil
1 tablespoon bacon fat
1/4 cup diced red onion
1 small carrot, cut into sticks (precooked)
1 sprig rosemary, chopped
1 jalapeno, cut in half lengthwise
4 Crimini mushrooms, quartered
1/4 cup diced red bell pepper
1/2 cup chopped broccoli (precooked)
1 clove fine minced garlic
4 dove breasts, cut into strips
salt and black pepper
1 tablespoon sunflower seeds
1 tablespoon bacon bits
Place skillet on low heat. Add olive oil and bacon fat. Add onions, carrots, rosemary and half of jalapeno. Cook on low for 4 minutes. Turn heat to high and add mushrooms, bell pepper, broccoli and garlic. Cook on high for 2 minutes and toss once or twice while cooking. Add dove breasts and saute for 2 minutes. Add salt and black pepper to taste. Finish with sunflower seeds, bacon bits and remaining half of jalapeno.
Precooking broccoli and carrots decreases the cooking time of the dish. Very helpful tip for those with hungry children!
Also, to turn up the heat chop the jalapeno instead!
