Went ahead and decided to go after an oryx this weekend...very fun hunt and alot of animal.
Not the best pic in the world but I don't like my mug on the screen, here he is.

appreciate it. 35". others had longer horns but i did like the symmetry of this guy and also a very deep red color, which you can't really see in this pic, that's what really got him.

Now i need to know how to cook all this meat??

Just cook it like any kind of venison and a lot of how you would cook beef. Look on here in the Recipes and Cooking section for some old threads. Never had any of turn out bad however I cooked it.

The meat is awesome, we have grilled it, chicken fried it, and cooled roast and all were awesome!

Great Hunt! Wow, other than the prickly-pear in the shot, I'd think you had shot him on Mars. He's gonna look good on the wall.

Like Stxranchman said, oryx is great meat. You can treat most if not all cuts like beef.

Thanks to all. Really appreciate it as it was a blast

Old_School....it is really dry in that area, there were plenty of live/shin oaks with diverse terrain but there is nothing for the wildlife (to browse) in most of Central/West Texas, in general.

They do an excellent job on the WRS of supplementing feed and water to the animals, this guy actually had a few layers of fat within him.

Ain't that the truth, out west while wing shooting, we noticed that grass burrs didn't come up this year. The shinery didn't make any acorns at all either. Everything looks like the dead of Winter. An ejected .22lr casing from a rabbit hunter started a 100+ acre fire. We wingshot from a gravel pad or plowed sand fire breaks so we didn't do the same. We didn't dare walk the fields to shoot this season.
