Looking to serve up some smoked hams and chile (using hog meat) this weekend. Anyone have a really good recipe for chile that's on the mild side? Yes, I realize I'm in Texas now and "mild" to some here might seem volcanic to others... but I truly mean "mild" for the sake of guests.

I have made this one for years, as stated it's not your cook-off recipe. You control the heat with the kind of Rotel used.
